After weeks (who am I kidding, months…) of constant stressing and working I will take four days off to relax at our summer house next week. The weather forecast predicts good weather too for once, yay!
I’m looking forward to spending some time in the garden, relaxing and sipping on lemonade. Lemonade is the best thirst quencher during summer, don’t you think? I love homemade lemonade, it’s both tastier and free from weird additives and preservatives.
This version is both super easy and quick to make, and the berries add a lovely fruity flavor – yum!
- 1 cup freshly squeezed lemon juice
- 3/4 cup sugar
- 4 cups water
- 1 cup blueberries
- 1/4 cup strawberries
- 1/4 cup fresh mint
- Bring sugar and half of the water to a boil and cook until the sugar dissolves. Let cool completely.
- Press lemons in a large pitcher, add the syrup and the rest of the water and combine well.
- Add blueberries, strawberries and fresh mint, and refridgerate for about 40 minutes or longer. The longer you leave it in the fridge, the more intense the berry flavor will be.
