This week has been pretty rough, and at times I have felt like everything is going against me. Even the weather has been depressing. On days like these it’s important to have something to cheer yourself up with, like these fig bars with cashew cream. I mean just look at them, how can you keep a bad mood with these on your plate? You can’t, I tried.. 😛
I have a weakness for raw sweets, in particular the chewy cake base with dates, dried fruits and nuts. This one, inspired by a recipe I found over at Secret Squirrel Food, is one of the very best if you ask me, and I’m not just talking about the cake base here but the filling is also incredibly tasty. Now that fresh figs are in season, what better summer treat to make than these?!
- 1/2 cup walnuts
- 1/4 cup almonds
- 2 tbsp desiccated coconut
- 2 tbsp crushed flaxseeds
- 1/2 cup dried figs, pitted
- 1/2 cup dates
- ½ tbsp water
- ½ tsp cinnamon
- Cashew cream
- 1/2 cup cashews, soaked over night
- 1/2 cup coconut milk
- 1/2 cup desiccated coconut
- 2 tbsp agavesyrup
- seeds from 1/2 vanilla bean
- fresh sliced figs
- Mix all ingredients for the cake base in a food processor to a sticky dough.
- Line a square tray with cling film, add the cake base dough and press firmly to an even layer using the back of a spoon. Place in the freezer to harden, and in the meantime, prepare the cashew cream
- Drain the cashews and mix in a food processor to a smooth mixture. Add coconut milk, agavesyrup and vanilla seeds and mix to an even and smooth mixture. Add desiccated coconut and pulsate a few times to combine everything.
- Pout the filling over the cake base and return to the freezer to set, about 2 hours. Take it out from the freezer about 15 minutes before serving and garnish the top with sliced figs. Cut into bars and serve.
