Heat a few tablespoons of oil in a frying pan, add panko and toast until golden, about 1 minute. Let cool and dry off on paper towels.
Fry garlic and ginger in sesame oil on medium heat in a pot until soft. Add broth and bring to a boil. Add mushrooms, lower the heat and simmer for 10 minutes or until the mushrooms are soft.
Add noodles and simmer for another 5 minutes. Remove from heat and add spring onion, carrots and spinach.
Serve in bowls and top with the toasted panko and Sriracha.
