One Pan Mexican Fried Rice
 
Ingredients
  • 2 garlic cloves, crushed
  • 1 green chili, finely chopped
  • 1 tbsp olive oil
  • 1 cup rice, rinsed and drained
  • 1¼ cup vegetable broth
  • 400 g/14 oz kidney beans, rinsed and drained
  • 2 tomatoes, chopped
  • ½ red bell pepper, chopped
  • ½ yellow bell pepper, chopped
  • 1 tsp chili
  • ½ tsp cumin
  • salt and pepper, to taste
  • juice from 1 lime
  • 2 tbsp chopped fresh cilantro
  • 1 avocado, diced
Instructions
  1. Sauté garlic and green chili in oil in a frying pan for one minute, add rice, broth, kidney beans, tomatoes, belll peppers, chili and cumin, stir and bring to a boil.
  2. Lower the heat and lett simmer for 20 minutes, untouched. Add salt to taste, squeeze some lime juice on top and garnish with avocado and cilantro.
