Eggplant curry

Before visiting Italy I didn’t understand the point of eggplant. All my experiences had been – at best – boring. But Italy changed all of that and I discovered so many new ways of cooking with eggplant. Italians love eggplant and use it on everything from the pizza to sandwiches and pasta dishes.

In Turin I lived in a small apartment just around the corner of Italy’s largest farmers market, so I took the opportunity to buy lots of fresh veggies from the farmers every day, including (ofcourse!) eggplant to experiment with.

This recipe is probably not one you would find in Italy, but it’s absolutely delicious, and in the end I think that’s all that really matters 😉

Eggplant curry

Ingredients
  1. 2 medium eggplants
  2. 1 1/2 tbsp vegetable oil
  3. salt, to taste
  4. 3 tbsp coconut oil
  5. 1/2 yellow onion
  6. 2 garlic cloves
  7. 1 cm/ 1/3 inch fresh ginger, grated
  8. 1 tsp ground cardamom
  9. 2 tbsp ground coriander
  10. 1/2-1 tbsp red pepper flakes
  11. 4 whole cardamom pods
  12. 1/2 tsp black peppercorns
  13. 1/2 tbsp turmeric
  14. 2 tomatoes, diced
  15. 1 can coconut milk
  16. chopped chives (optional)
  17. chopped parsley (optional)
  18. rice for 4 people
Instructions
  1. Cut the eggplants into dices and place on a baking tray lined with baking paper. Drizzle with som oil and sprinkle with a bit of salt. Toss to coat and roast in the oven at 200°C/190F for 20 minutes.
  2. Sauté onion, garlic, ginger, ground cardamom, coriander and red pepper flakes in a large pot until the onion softens. Crush whole cardamom pods along with the peppercorns in a mortar. Add the ground spices and turmeric to the pot and stir.
  3. Add tomatoes, coconut milk and the roasted eggplant and bring to a boil. Lower the heat and let simmer for 20 minutes, stirring every now and then. If the curry is too watery, let it simmer without a lid until it thickens. In the meantime, boil the rice according to the instructions on the package. Add fresh herbs to the curry and serve with rice.
