Mexican Fried Rice

Several days a week I find myself with leftovers in the fridge, especially rice. I can imagine I’m not the only one to have rice leftovers, so if you too are looking for something to do with it, you’ve found the right recipe!

This is super easy to make, ready under half an hour and a perfect use for that day old rice you still have in the fridge. I love mexican flavors, and this meal is no exception. 😉

Mexican Fried Rice

  1. 3 tbsp olive oil
  2. 3 garlic cloves, crushed
  3. 1 tsp chili powder
  4. 1 1/2 tsp cumin
  5. 1/2 tsp paprika powder
  6. 1/2 tsp oregano
  7. 1/4 tsk pepper flakes
  8. 1 yellow onion, chopped
  9. 1 green bell pepper, chopped
  10. 1 branch romantica tomatoes, chopped (or 2 regular tomatoes)
  11. 1 can yellow corn, drained
  12. 2 cups cooked long-grain rice (preferrably day old)
  13. 1 tbsp tomato puree
  14. 1 can black beans, rinsed and drained
  15. 1/2 cup fresh coriander
  16. salt & pepper, to taste
  1. Prepare the vegetables. Fry onion on low heat in a large frying pan or wok for a minute. Add spices, stir and let simmer for a few minutes to let the aromas release and the spices begin to sizzle.
  2. Add onion and bell pepper, increase the heat and fry for 5 minutes. Add chopped tomatoes and corn, stir and continue frying for another 5 minutes.
  3. Add rice, mix well and finally add the tomato puree, black beans and coriander. Heat through and add salt and pepepr to taste, possble some more chili too. Serve!
  1. You don't need to use day old rice if you don't have any, just boil some new rice before you start cooking this recipe.
