Crunchy Quinoa & Apple Granola

It’s a well known fact that Sundays were made for sleeping in and breakfasts in bed, and most would agree that there is no better breakfast than home made granola, yum!

The best thing about making your own granola is that it’s super easy to make, even with the slightly more luxurious versions like the one I’m about to share with you – the downside is that because the home made ones are so much tastier, they’re gone so much faster!

I just find it very difficult to stop myself from snacking on some granola whenever I go past the kitchen, but even if I do have to make a double batch of it, it’s so worth it ;).

Quinoa and Apple Granola

Crunchy Quinoa & Apple Granola

Makes about 1 liter/5 cups

  • 3 cups oats
  • 1/2 cup quinoa, oncooked
  • 1/2 cup cashews
  • 1/2 cup walnuts
  • 2 tsp ground cinnamon
  • 1/4 tsp ground muscot
  • 1/4 tsp ground cloves
  • 1/8 tsp salt
  • 1 large apple of choice, peeled and diced
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 cup brown sugar
  • 1/2 cup apple sauce
  • 1/4 cup maple/agave syrup
  • 3/4 cup raisins
  • 1/2 cup goji berries
  1. Set the oven at 160°C/320F. Rinse quinoa in water and add to a bowl with oats, nuts, cinnamon, muscot, cloves and salt. Stir to combine. Add the diced apple and set aside.
  2. Whisk oil, vanilla extract, brown sugar, apple sauce and syrup in a separate bowl and then add it to the bowl with the dry ingredients. Mix well.
  3. Spread the granola in an evel layer onto a parchment-lined baking sheet and bake in the oven for 45 min. Stir the granola ever 15 minutes or so to prevent them from burning. Let cool for about 20 minutes.
  4. Transfer the granola to a large bowl and add raisins and goji berries. Store in an airtight container at room temperature, the mixture lasts for about 2 weeks.


Att söndagen är dagen då sovmorgnar och frukost på sängen är ett måste är ingen hemlighet, och den bästa frukosten av dem alla är såklart hemmagjord granola!

Det bästa med hemmagjord granola är att det är så sjukt enkelt att göra, även de lite lyxigare variationerna som dessa är enkla och hyffsat snabba att göra.

Den enda nackdelen är att de är så oemotståndligt goda att man äter dubbelt så mycket av det! Jag kan inte låta bli att nalla av granolan varje gång jag går förbi köket så jag brukar göra dubbla mängder, men det är det värt! 😉
