It’s been about a year since I first made these raw brownies, and although I have tried lots of other raw brownie recipes and variations since, this one is still one of my favorites.
It’s easy to make, quick to prepare and the ingredients are the kind that I already always have at home so I won’t need to make any trips to the grocery store when I crave for something sweet but still a bit healthy.
Feel free to play around with the choice of nuts, but I find almonds to suit great here :).
Enjoy!
- 1 cup walnuts
- 1 cup dates
- 1/2 cup cocoa powder
- 1/2 cup almonds
- 1 pinch sea salt
- 1/2 cup coconut oil
- 1/2 cup cocoa powder
- 1/4 cup agave syrup
- 1 pinch himalaya salt
- ¼ tsp vanilla extract
- Pulse the walnuts in a food processor until crumbly. Add salt and cocoa powder and mix until combined. Add a few dates at a time while the food processor is running, until the mixture is sticky and a little crumbly. Add more dates if it isn't sticky enough.
- Transfer the mixture to a bowl and add chopped almonds. Cover the bottown of a brownie pan with a baking sheet and firmly press the mixture into the pan.
- Melt coconut oil and mix with the remaining ingredients for the topping, and spread on top of the brownie layer. Freeze for about 1 hour until chocolate is firm and brownie mixture has set. Remove from the freezer, cut into squares and serve!
