Roasted tomato soup

On cold winter days I crave for two things: hot chocolate, and a warm soup – although not preferrably both at the same time! 😛

Since this recipe only requires a handful of ingredients it’s perfect for days when the fridge is almost empty, or when you come home late from work and want to warm up and fill your belly with something wonderfully delicious and yet simple.

  1. 6 large ripe tomatoes
  2. 2 tbsp olive oil
  3. 1 red onion, cut in wedges
  4. 1 tsp black pepper
  5. 3-4 garlic cloves, finely chopped
  6. 1/4-1/2 cup hot water
  7. salt & sugar, to taste
To Serve
  1. (non-dairy) cream cheese
  2. rustic bread
  1. Preheat the oven at 180°C. Cut the tomatoes in slices and place in an oven proof dish with garlic and red onions. Drizzle with olive oil and roast in the oven for about 25-30 minutes.
  2. Mix the tomatoes, garlic, red onion and juices from the dish in a blender. Add pepper, salt and sugar to taste, add the hot water and mix to the consistency you prefer. Garnish with basil and serve with a dollop of cream cheese and a slice of bread.
