I love these vegan almond cookies, they’re crunchy, nutty and super easy to make – perfect dunking biscuits with a cup of coffee!
I was inspired by the almond cookies I had in Italy a few years back, and wanted to make some vegan almond cookies that I could bake quickly and easily for afternoon tea.
This is the result, and I actually really love them! The ingredients are simple and the kind I always have on hand in my pantry, hope you try them out!
- 1/2 cup non-dairy butter
- 1/2 cup icing sugar
- 1/2 cup grated almonds (or almond flour)
- 1/8 tsp salt
- 1 tsp almond essence
- 1 ½ tsp vanilla extract
- 1 cup flour
- Preheat the oven at 165°C/330F. Cream butter and icing sugar until fluffy. Add salt, grated almonds, almond aroma and vanilla extract and combine.
- Add flour and work into a sticky dough. Scoop pieces of the dough with a spoon and place on a baking tray lined with parchment paper. Bake in the oven for about 15–20 min. Let cool.
